mac & cheese

The staple of most starvin’ college students is mac and cheese. Ah yes, that wonderful food thatcomplements anything.

As American Chef, James Beard, wrote “Food is our common ground, a universal experience.” Never underestimate the power of a good solid dish to shape your life and the lives of those around you.

When I sat in my college apartment, I had all the staples I thought I needed at the time, namely; my music, my black light and associated posters, my chopper and a cabinet filled with boxes of mac and cheese…shoes and shirts were definitely optional.

These days when I end up in downtown Nashville at lunch time, I have a portion of mac and cheese at J Alexander’s finished off with a nice chardonnay and think that no matter how far I go, I still have the fall back position of being a mac and cheese type of guy.

Freud thought that every normal person, in fact, is only normal on the average. His ego approximates to that of the psychotic in some part or other and to a greater or lesser extent.

I’m crazy about my mac.
